To make the gaming experience more interresting, and finding items more rewarding, the research through Workbenches has been disabled on Hunting Season.
Instead you must find the actual item – or trade/steal it – put it in a Research Table and add the scrap amount required to create a Blueprint.
This is how it was way back and most seasoned players think this is both more challenging and fun. The old system also opens up for more player to player trading.
Additionally this makes exploring monuments much more viable.
